Readable names

Sustain Pedal, not "CC 64".

Mapped and incoming control-change messages show meaningful names. Standard controls read as Sustain Pedal, Mod Wheel, Expression, and Cutoff, and a recognised controller's own buttons and knobs use its real labels. The Keyboard Controls settings name every control, so you always know what you're mapping.
